Healthy Holiday Appetizers

Check out these easy and healthy recipes for your next holiday party. Today on Fox 19 Morning News we made: 

Bruschetta Pomodora Dip
RoseMerry Berry Lemon Spritzer

Here's how I made them...
Bruschetta Dip

1-2 ripe tomatoes (3-4 Roma tomatoes)
3-4 chopped garlic cloves 
1/4 cup Parmesan cheese 
3-4 fresh basil leaves chopped 
2 tablespoons reduced balsamic vinaigrette 
Salt and Pepper to taste
Parsley for garnish

RoseMerry Berry Lemon Spritzer 

1 shot lemon flavored alcohol (optional)
1/2 cup lemon flavored club soda 
1/2 cup raspberry Simply Lemonade
4-6 raspberries 
2 sprigs of fresh rosemary 
Rosemary Honey simple syrup (equal parts honey to water, simmer with Rosemary springs) 


1. Chop tomatoes into bite size pieces, place in bowl, add in chopped garlic, 1/2 of the Parmesan, salt and pepper, olive oil, and basil. Gently combine. 
2. In a sauce pan reduce balsamic vinegar until thick and syrupy. 
3. Drizzle reduced vinegar over bruschetta, top with remaining Parmesan and parsley. 

1. In a tall glass muddle fresh raspberries, add simple syrup, add shot of lemon liquor, then top with club soda. 
2. Stir gently and DRINK!  

**liquor can be removed for the kiddies**
